Ours was fantastic! We had margarita grilled chicken with herbed greek roasted potatoes topped with feta cheese. Are you drooling yet? Well you should be because it was divine. Seriously some good stuff. Our table sounded like an x rated film thanks to all the moaning and groaning about how good it was! The little kids even liked it :)

Since I am quite sure your computer screen isn’t scratch and sniff, I’m going to share the recipes with you so you too can smell and taste how simply delicious these two dishes are!

Margarita Grilled Chicken

* 3 pounds boneless, skinless chicken breast halves
* 1 container frozen margarita mix
* 1 bunch fresh basil
* 3 cloves garlic, minced

DIRECTIONS

1. Pour the margarita mix into a large resealable plastic bag. Add the chicken breasts, basil, and garlic and press out as much of the air as possible before sealing. Marinate 4 to 8 hours in the refrigerator.
2. Preheat an outdoor grill for medium-high heat.
3. Lightly oil the grill grate. Remove chicken from marinade, and discard the marinade. Grill chicken 8 minutes per side, or until juices run clear.

This makes the most tender, juicy, best tasting chicken I’ve ever had. Please try it!

Herbed Greek Roasted Potatoes topped with Feta cheese

* 5 pounds potatoes, cut into wedges
* 6 cloves garlic, minced
* 3/4 cup olive oil
* 1 cup water
* 1/4 cup fresh lemon juice
* sea salt to taste
* ground black pepper to taste
* 1 1/2 tablespoons dried oregano
* 1 teaspoon chopped fresh mint
* 1 (8 ounce) package crumbled feta cheese

DIRECTIONS

1. Preheat an oven to 450 degrees. Lightly oil a large baking dish.
2. Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.
3. Roast in the preheated oven until the potatoes begin to brown, about 40 minutes. Season the potatoes with the oregano and mint. Return to the oven and bake about 40 minutes more. Top with the crumbled feta cheese to serve.
